1. Then prepare a good amount of salt, not too much, about 200 grams of vinegar, 200 grams of soy sauce and 100 grams of sugar, and once you have all these ingredients, we can make the garlic.
2. Take care of the prepared garlic, firstly peel off the outer skin, garlic only need to peel off the outer skin , leaving two layers inside,then cut the fresh garlic stems with a knife, then put aside. Add 10 grams of salt to the water and stir it well to melt the salt.
3. Once the salt has melted, soak the fresh garlic in it for at least 24 hours. Soaking fresh garlic in edible salt water will not only have an antiseptic effect, but will also remove the spicy taste of the garlic. When soaking fresh garlic, don't soak it and leave it alone, let's give it a change of cool white water when it has been soaking for 12 hours.
4. After the garlic has been soaked, we take it out, control the water and then put it on the steamer to dry. The steamer should be placed on a basin so that the water can be diverted into the basin and not get all over the place, and it is easier to handle. While the fresh garlic is drying, let's make a sweet and sour sauce.
5. Add a kilo of water to the frying pan, then add about 200g of vinegar, 200g of soy sauce and 100g of sugar. After adding these seasonings, let's turn the heat to low and then simmer slowly while stirring. Simmer until the sugar has melted, then turn off the heat and set aside to cool.
6. After the fresh garlic has dried out we put it into a container without water or oil, it is important to note that the container must be free of water and oil and can be sealed so that it does not breathe a little, otherwise the sugar garlic will easily deteriorate and fail during the pickling process. Once all the garlic has been added, we pour in the cooled sauce and seal it up for about 20 days.
Tips
1, the water used to soak the fresh garlic should be cool white water, because it contains less impurities and can improve the success rate of the garlic pickle.
